Cupcake Kids Class tomorrow...April Showers bring May Flowers!

Well I do know this is NOT a May flower, but I thought it would be a fun cupcake for the kids to make at class tomorrow morning!  ;) 
Also, this may be Lia's 3rd birthday cupcake (a perfect flower for August!)....

Doulbe Rainbow!

Frank, Lia and I went to the Zoo tonight for Tunes & Blooms.  But it was more like Showers & Storms.  We missed the first band and the 2nd one didn't even play b/c of the rain.  We had fun anyway because we were all together.  Altho Lia was disappointed in the fact that she didn't get to see any "aminals". 
However, when we were leaving, we saw this incredible DOUBLE rainbow! 
It was awesome!  Lia's first rainbow and it was a spectacular one!  :)

Easter Sunday!

 We had a full and great Easter Sunday!  Of course, we started off checking out the Easter basket that the Easter Bunny left for Lia, along with an egg hunt inside the house.  We then went to church, out for lunch and then to the Zoo.
 This peacock opened up just for us!  No kidding.  Beautiful!
 The gorillas were moving about.
 There was the ever present Polar Bear swiming laps!
 Here is the leg of lamb roasting in the oven with the potatoes.
 I forgot to get a picture of this before I began to eat...but the meal  was amazing.  I think one of the best meat dishes I have ever cooked...Leg of Lamb Stuffed with Greens and Feta, along with the potatoes and a favorite of both Frank and I, the Cavolfiore Romano (mashed cauiflower steamed in milk and garlic with cream cheese and romano cheese).
Can you say yum?  Espeically that it is local lamb, which I ordered from Gorman Heritage Farm!  And, it's stuffed with my chard from last fall.

Coloring Easter Eggs!

 Today we colored eggs together as a family!  It was really fun.  It is especially nice that we can use our OWN hen's eggs!  I've been saving up the lightest colored ones for a while!
Little Miss is pretty excited about our eggs!  :)  She had a busy day today:  Cupcake Kids Class, planting Sunflowers, then egg dying.  Her next question was "what are we going to do now Mommy?".  My answer  "take a nap!". 

Cupcake Kids!

 Right now I am teaching "Cupcake Kids" at CFEC on Saturday mornings.  Lia got to take the class today, and the theme was "Going on an Easter Egg Hunt".  Here they made some Easter Baskets with cupcakes, frosting, coconut flakes, mini eggs and licorice!  Lia couldn't wait to take a bite of the licorcie.
 Now it's Teddy's turn!
 They really had fun!

EXOTIC MUSHROOM PIZZA! YUM!


I stumbled across some mushrooms on sale and I decided to make this mushroom pizza with home made whole wheat crust.  Lia was pretty excited about these mushrooms, she loves them!  And then she chose corn on the cobb at the grocery (which was surprisingly very good!). 
It was a great meal!   :)

Goose Dinner


The meal was DELICIOUS!  A BIG thank you so much to my friend Karla, who gave us these goose legs.  I roasted them wrapped in garlic and bacon on top of potatoes and onions.  We've never had goose legs before but hope to have them again!  :)

Kite Festival!!!

Frank, Lia and I went to the Kite Fesitval today!  It was amazing!  We had NO idea what people could do with kites...we had never before seen anything like it.  The kites were literally dancing in the sky!

ONION TORTA!

OMG can I tell you that I have not made this in YEARS?  We LOVE LOVE LOVE this buttery, eggy, oniony, cheesey torta so so much.  I don't know what made me think of it....but I am so glad that I did.  This was gone within 24 hours at our home (and really just Frank & I eating it).  I remember making a double batch of it on our honeymoon in Hawaii.....in Kona to be exact.  I made it in a 13 x 9 pan.  This is incredibly decadent and wonderful.  Thanks Connie for turning me onto this recipe.  The next time I make this I am going to include some greens/mushrooms/other veggies, etc. b/c my friend Tami just made it and added chard (GREAT idea Tami)!  I think with mushrooms it would be fantastic (but of course it's fantastic just AS IS).
